why do some people gain weight from carbs?


It really is simple.

Our bodies are made to survive.

Say you consume 50 grams of carbs a day and this is what you have done for a while, your body has learned to live on little energy. Then you increase your carbs to 150 grams (because you found out this is what you need). So you increase your carbs, then you get bloated, gain weight and you freak out (I would too)thinking this isn’t working for you so you go back down to the amount of carbs you normally eat.

Roasted Vegetables with Orzo

1 eggplant (small, peeled and diced) and/or zucchini (diced)
1 red bell pepper (diced)
1 yellow bell pepper (diced)
1 red onion (diced)
2 cloves garlic (mined)
1 cup of Orzo

Dressing:
1/4 cup lemon juice
1/4 cup olive oil

Directions:

1. Preheat oven to 425F
2. Toss all vegetables in olive oil just to coat and place on a baking sheet and salt and pepper, roast for 40 minutes, turning once, until browned
3. Cook Orzo, drain and place in a large bowl
4. Add the roasted vegetables to the Orzo
5. Add dressing

To make a cold salad, let cool and add your choice of nut (pine or walnuts) and feta cheese.

New Year's Resolutions 2013

I normally make goals for myself all throughout the year, but I thought this year I would make New Year’s Resolutions that will be my long term goals for this year.

1.       Take the money we spent on our monthly date night dinner and drinks out we will eat at home and that money we would have spent will be donated – each month a different cause.

2.       Only buy clothes on sale or where I get a discount from

3.       Recycle everything I can – try and get 2 or 3 uses out of something

4.       Save more money

5.       Finish my projects I have started (I have a list of 10 projects)

6.       One Year Purge – I have made a schedule for the next 12 months and each month I have given myself an area in the house, garage, or outside and purge to donate or sell on items I haven’t used in the last year.

7.       Read More Books

8.       Wear more of the clothes in my closet

9.       Volunteer More – I already Head Coach Special Olympics Swimming every week and I am going to add some more volunteering to my list

10.   Over All Health – continue to working on the healthiest me
